  • 1 can diced tomatoes with green chilies, drained
  • 8-10 corn tortillas
  • 2 cups shredded cheese
  • 1/4 cup chopped fresh cilantro leaves

Instructions:

  1. Preheat oven to 375 degrees F.
  2. In a large skillet over medium-high heat, add olive oil, onion, bell peppers, and zucchini, and sauté for about 6-7 minutes, until softened.
  3. Add garlic, chili powder, cumin, smoked paprika, and cayenne pepper, and stir to combine for another minute.
  4. Add black beans and diced tomatoes with green chilies and cook for another 5 minutes to combine flavors.
  5. Spoon 1/4 cup of the mixture into each tortilla and roll each tightly. Place filled tortillas seam side down in a large baking dish.
